Ouirgane sits in a wide, sheltered basin on the northern edge of Toubkal National Park, where the road from Marrakech finally leaves the plain behind. Red earth, olive terraces and juniper slopes surround a reservoir that turns turquoise in spring.
It is the nearest village with a real weekly market, a handful of cafés and a salt-house tradition that goes back generations. Most guests pass through it on the way up to us — it is worth stopping.
What to see
The reservoir walk
A flat two-hour loop along the water with the Toubkal massif behind it. Best in the late afternoon when the light turns the far bank copper.
The salt pans
Family-run evaporation basins still worked by hand, just outside the village. Ask before photographing — these are working plots, not a site.
Sunday souk
Vegetables, wool, mint, spices and mules. We shop here for the cooking workshop, and guests are welcome to come along.
